Premiering in 1980, Cookin' Cheap was a staple on Blue Ridge PBS for more than 20 years. This comedy cooking show was served up lots of laughs and interesting dishes. Periodically, we'll share a favorite recipe here from the show.
Looking for a way to use leftover turkey? This recipe was from season 19 in 1999 and was sent in by Joanne Kuchinski from Dry Fork, VA.
POULTRY STEW
2 cups broth, canned or reserved from cooking chicken or turkey
2 cups cooked chicken or turkey in bite size pieces
16 oz. bag frozen mixed vegetables (corn, peas, carrots, etc.)
2 ribs celery, chopped
1 onion, chopped
1 pkg. chicken or turkey gravy mix
2 T. cornstarch
1 T. poultry seasoning or 1 tsp. each: parsley, sage, thyme,and garlic powder
Place broth and poultry in the pot. Add onion and celery. Heat to boiling. Add mixed vegetables. Turn down the heat and simmer until the celery and onion is cooked and vegetables are hot. Add the spices then add the gravy mix. If the gravy is not thick enough, add 2 T. of cornstarch in ¼ cup of water to mixture. Simmer until gravy thickens. Serve over egg noodles or place in a casserole and cover with a pie crust and bake.
